University of Melbourne team takes a close look at cheese

Bio 21 Institute researcher Dr Sally Gras and her team from the Department of Chemical and Biomolecular Engineering were featured in Dairy Planet, a Dairy Innovation Australia publication November 2008. With the assistance of Dairy Innovation, the team has been awarded a prestigious Australian Research Council (ARC) Linkage grant for research into the microstructure of cheese and related dairy products. They aim to develop cheese manufacturing process controls, and to take advantage of industry/University training opportunities. Read the article in Dairy Planet, Issue Seven November 2008.
